Easy uce-don noodles

Serves: Two as a light main

Prep time: 5 minutes
Cooking time: 10 minutes

Ingredients

4 tablespoons of uce peanut rayu
1 tablespoon of soy sauce
1 tablespoon sesame oil
1 clove of garlic finely chopped
1 portion of udon noodles per person

Instructions

  1. Into a hot pan fry your 4 tablespoons of uce peanut rayu and chopped garlic for a few minutes until fragrant and extra crispy.

  2. Meanwhile cook your udon noodles to the packet instructions.

  3. When cooked, drain and then stir them into the pan along with the soy sauce and sesame oil.

  4. Serve with an extra drizzle of uce to taste, and garnish with sesame seeds, lime and spring onions.

How to serve

This is a great dish to serve as a quick mid-week main. Want to add more protein or veggies? It’s great with crispy tofu, chilli beef or scrable-fried egg. And all sorts of stir-fired vegetables make a great addition: mushrooms, broccoli, bean sprouts, carrot and kimchi are all excellent. Garnish with an extra drizzle of uce, sesame seeds, sliced spring onions or chopped coriander, along with a wedge of fresh lime.
