Mango and uce salad
Serves: Two as a main or four as a side dish
Prep time: 15 minutes
Ingredients
4 tablespoons of uce peanut rayu
Half a red onion
1 ripe mango
1 red pepper
Half a bunch of fresh coriander
Instructions
Slice up the mango into lengths
Dice up the red onion, red pepper and most of the coriander including the stems
Place everything into a bowl and stir in the uce peanut rayu
Season with salt and pepper to taste
Top with a garnish of coriander and an extra drizzle of uce
How to serve
This is a great dish to serve as a quick mid-week lunch, as a barbecue side dish or served with a tasty seared tuna steak.
